The customer proceeded to order 10 pickle sandwiches for her office and Katherine knew she was on to something. That was the moment that launched a pickle phenomenon. One fateful afternoon, Katherine, who had been making pickles for the market, threw together a quick sandwich for her mother using a pickle in place of bread.Īs her mother devoured the new discovery, a customer entered the store and inquired about what Theresa was eating. Theresa, who owned the Linwood Market, was working on improving her nutrition. Nearly a decade ago, Katherine Cohen was helping her mother, Theresa Cohen, in their family-owned convenience store. The Northfield location is a “coming home” story, as South Jersey is where it all began. The two locations are operated by sisters, Katherine and Molly Cohen, along with their husbands Chad Jordan and Mateo Galvez, respectively. ![]() Elsie’s in Northfield, which opened May 10th, is a franchise of the original Elsie’s in Haddon Township.
